Tostada

Is a Spanish word meaning "toasted". In Mexico and other parts of Hispanic America it is the name of different local dishes which are toasted or use a toasted ingredient as the main base of their preparation. Even though the tortilla is fried, the meaning sticks with it.

In Mexican usage, tostada usually refers to a flat or bowl-shaped (like a bread bowl) tortilla that is deep fried or toasted. It may also refer to any dish using a tostada as a base. It can be consumed alone, or used a base for other foods. Corn tortillas are usually used for tostadas, although tostadas made of wheat flour may occasionally be found.

Chocolate cake

The chocolate cake is a dessert known internationally, that became popular in the late nineteenth century and is often served at meetings such as birthday parties and weddings. Shrimp cocktail

Flan

In Spanish-speaking countries and in North America, flan refers to crème caramel. This was originally a Spanish usage, but the dish is now best known in the United States in a Latin American context.
Crème caramel is a variant of plain custard (crème) where sugar syrup cooked to caramel stage is poured into the mold before adding the custard base. It is usually cooked in a bain-marie on a stove top or in the oven in a water bath. It is turned and served with the caramel sauce on top, hence the alternate French name crème caramel renversée.

Scallops

Is a common name that is primarily applied to any one of numerous species of saltwater clams or marine bivalve mollusks in the taxonomic family Pectinidae, the scallops. The common name "scallop" is also sometimes applied to species in other closely related families within the super family pectinoide.
Scallops are a cosmopolitan family of bivalves, found in all of the world's oceans, though never in freshwater. They are one of very few groups of bivalves to be primarily free-living; many species are capable of rapidly swimming short distances and even of migrating some distance across the ocean floor. A small minority of scallop species live cemented to rocky substrates as adults. Some others species are more simply attached, by means of a filament they secrete. The majority of species, however, live recumbent on sandy substrates, but when they sense the presence of a predator such as a starfish, they are able to escape by swimming swiftly but erratically through the water using a form of jet propulsion created by repeatedly clapping the valves of their shells together. Scallops have a well-developed nervous system. Unlike most other bivalves, they have numerous simple eyes situated around the edges of their mantles.

Many species of scallops are highly prized as a food source, and some are farmed as aquaculture. The word "scallop" is also applied simply to the meat of these bivalves when it is sold as seafood. In addition the name "scallop" is used as part of the name of dishes based on the meat of scallops, and is even applied to some dishes not containing the meat of these bivalves, dishes that are prepared in a similar fashion. The brightly colored, symmetrical, fan-shaped shells of scallops, with their radiating, often fluted sculpture, are valued by shell collectors, and have been used since ancient times as motifs in art, architecture and design.

PAELLA

Is a Valencian rice dish with ancient roots that originated in its modern form in the mid-nineteenth century near Albufera lagoon, a coastal lagoon in Valencia, on the east coast of Spain. The dish is widely regarded as Spain's national dish, but most Spaniards consider it to be a regional Valencian dish; Valencians regard paella as one of their identifying symbols. Spanish food historian Lourdes March notes that the dish "symbolizes the union and heritage of two important cultures, the Roman, which gives us the utensil and the Arab which brought us the basic food of humanity for centuries."
On the Mediterranean coast, Valencians used seafood instead of meat and beans to make paella. Valencians regard this recipe as authentic as well. In this recipe, the seafood is served in the shell. A variant on this is paella del senyoret which utilizes seafood without shells. Later, however, Spaniards living outside of Valencia combined seafood with meat from land animals and mixed paella was born.This paella is sometimes called "preparación barroca" (baroque preparation) due to the variety of ingredients and its final presentation.

During the 20th century, paella's popularity spread past Spain's borders. As other cultures set out to make paella, the dish invariably acquired regional influences. Consequently, paella recipes went from being relatively simple to including a wide variety of seafood, meat, sausage, (even chorizo) vegetables and many different seasonings. However, the most globally popular recipe is seafood paella.

History of the company

19 years ago I came to this beautiful paradise called Cabo San Lucas, started in a place called "Kokomo" as assistant bartender, I was 16 years old, Kokomo was the most popular night club in Cabo San Lucas at the time, I remember I arrived with a desire to succeed and go surprise that my first tip as an assistant bartender was $ 2,500.00 pesos, remember it was spring break and I really liked that job, so I could start a new life, after a year, by many tests and exams and learn a list of 500 drink recipes finally I became a bartender, I like the job so much that two years later i went to work at a restaurant near the beach called "Billigans" today is not so popular but in its time was the best restaurant on the beach, a little later someone invited me to work an event in a company called "A matter of taste" there i worked as a waiter, bartender and assistant sommelier. It was there where my love for gastronomy was born and also my taste for fine food and good service that A matter of taste offered to their customers.

Julianne, owner of a matter of taste was my role model for how you behave with customers as with their workers, excellent human qualitys. Then I worked in other catering as "Dennys Catering" and "Lazy Gourmet" from Tracy the owner of Lazy Gourmet I learned her strength, perseverance and excellence in service, then I work in places like "Ventanas del paraíso" "Palmilla" "Club 96" There I saw my favorite actor Robert De Niro but before he entered, a well dressed person, firm but noble character came; was the butler of Robert De Niro's there I was inspired to be butler and it was shortly after I prepared and applied to work in "Villas del Mar" where I got the opportunity to be butler, later I got the opportunity to work in "El dorado" where I met many actors, then I continued studying to be a chef and that was how I came to work for "Chef in place" where it was not easy to enter because I remember I was calling them for almost six months and they always said that they call me back, until one day Jorge Gonzales the company owner called me and gave me the opportunity to work with him and so I learned more about the wonderful world of gastronomy and it was he who unknowingly motivated me to start my own company chef and Butler private services. I thank colleagues, bosses and friends directly or indirectly taught me to be better everyday at work and in life.
